Love Happiness and Ice Cream
Sweet, salty, in a tub, in a cone, in the form of a sorbet or accompanying a cake. Ice cream is one of the desserts that awakens the imagination and the desire to innovate of most pastry chefs in the world, including the youngest of the Roca brothers. Jordi Roca has made ice cream one of the pillars of the cuisine of El Celler de Can Roca, Rocambolesc and even of his life, coming to consider them pure happiness.
“There is no more sincere love than the love for ice creams” is the motto of Rocambolesc, the ice cream parlor that Jordi Roca and his wife Alejandra Rivas created in April 2012, where ice cream of all kinds of flavors are made. Some of them really weird.
“We have made a lot of weird ice creams; mustard, grilled mushrooms, pandan (an Asian herb), roast chicken ”says the youngest of the Roca brothers, who before opening Rocambolesc was already experimenting with ice cream at El Celler. For Jordi, innovation has become a way of life, he is not satisfied and therefore seeks to surprise with new and disconcerting flavors. "Now the challenge is to get Iberian sow milk, to make an ice cream that I am sure will be incredible" says Jordi.
In Rocambolesc one can find a large number of flavors and combinations. Pumpkin and mandarin sorbet with carrot cake and pipe nougat, or his famous Làctic ice cream, inspired by the dessert of the same name, are just a few examples, but Jordi confesses which one is the most successful among the public. "The one that triumphs the most is the baked apple ice cream, which is made from the baked apple recipe that my mother makes."
Another of Rocambolesc's star products are polo shirts. From a tribute to Star Wars with its dark blueberry and vanilla sorbet ice cream, to the now famous Velencoco with coconut, lemon, cinnamon and meringue milk, to La Mano - a tribute to the Game of Thrones series - The Strawberry Bear and the Finger of Columbus. Besides all these, Jordi warns: surprises are coming.
