Oolong tea is partially oxidized and can have oxidation levels between green (minimally oxidized) and black tea (fully oxidized). It’s the variation in processing that result in an exceptionally diverse range of flavours, pretty much like the different red wines or white wines. Where and how they are grown, how old the tea tree is and the specific climate all determine the taste of each Oolong tea. Light oolongs as well as low/medium roast dark oolongs tend to have a sweeter taste. Oxidation Levels Oolongs that are lightly oxidized still maintain their greenish colour. These oolongs often times have flavours that are closer to green tea. Having said that, due to oxidation, the taste is less grassy and smoother. The aroma tends to be flowery. Roasting Processes Darker oolongs with stronger oxidation levels have a different character. The leaves are dark due to the intense roasting process. Low to medium roast oolongs have a fruity and honeylike aroma’s whereas, high roast oolongs have more savoury notes such as cinnamon or caramel. Dark oolongs from Wuyishan (e.g. Da Hong Pao or Himalayan) also have a unique mineral rich taste. This is due to the unique soil of the tea region. Oolong Tea with Milk? If you must have tea with milk, buy a cheaper Oolong tea to prepare with milk. But good and rich Oolong teas should be had without milk. Chinese bubble teas or Boba are prepared with milk.
If you found your oolong tea too bitter, you need to brew it at a lower temperature or lesser steep time than previous. Ideally oolong teas should be steeped at full temperature of 90 degrees, you should try using less amount of the tea leaves and/or reduce the steeping time. Method /Process of making Himalayan Oolong tea The preparation of oolong tea depends on the type of tea you are buying.
